From 50-year old vines on the hillside above the village of Barolo at 300-400m altitude, Canonica’s plot is farmed organically, the vines entrenched in calcareous marl & clay. Fully de-stemmed and macerated for 30-40 days. Vertical hand-pressed into concrete and Slavonian oak for aging, up to 4 years.
