Created by Dr. Ivan Saldana and produced by 5th generation mezcalero, Don Abel Lopez, Montelobos, meaning mountain of wolves- is an unaged mezcal made from organic espadin agave. The agaves are sourced Loma Larga in Santiago Matalan Oaxaca. They are roasted for 5-7 days in a stone pit, and then agaves are crushed with a tahona and allowed to naturally ferment.
