1.1 hectares of Chenin Blanc planted in 1947 on talc and red clay soils. Very gently pressed and settled before fermenting on native yeasts in Burgundy barrels and tanks without any addition of sulfur (until first racking) . Aged 1- months and allowed to go through malo-lactic conversion.
