Near the very highest vineyards on Mt. Etna, the vines sit between 900-1000m altitude. A blend of Grecanico Dorato (60%), Carricante (10%), Coda di Volpe (30%), all ungrafted and between 60-90 years of age. The grapes will macerate for 4 days after a light crushing, then ferment in neutral tank where they will age for 18 months prior to another 18 months in bottle. 300 magnums created.
