2021 Patrick Baudouin, Anjou, Blanc Effusion

From two Chenin Blanc parcels planted in the early 1990s on volcanic “effusive” rock soils – one rich in mica & silica, the other more schist and sandstone. Very gently pressed and settled before fermenting on native yeasts in Burgundy barrels and tanks without any addition of sulfur (until first racking) . Aged 10 months before bottling.
