From a 2009 planting of Chenin Blanc over schist soils, 0.9 hectares in size. Very gently pressed and settled before fermenting on native yeasts in Burgundy barrels and demi-muids without any addition of sulfur (until first racking) . Aged 12 months and allowed to go through malo-lactic conversion.
