A bottling for a local festival in Dijon, the grapes are from the very same source as the Coteaux du Dijon – within En Bessy, vines planted between 1983-2001 on clay-limestone soils. Fermented and then aged 10-12 months in used oak barrels with partial stem inclusion, the difference is that this wine is bottled without any sulfur addition in order to be enjoyable right upon opening.
