Matured in French oak casks from Eden Specialty Ciders previously used to house their tart, late-season Northern spy apple cider, this limited-release whiskey is composed of a mash bill containing 95% rye and is the first iteration from Angel Envy’s Cellar Collection. Eden pressed their spy apples in 2018 and stored the concentration over the long Vermont winters to imbue each cask with richly hued autumnal spice. Angel’s Envy Ice Cider Rye rested for 1 day short of a year in these select casks and is finished to 53.5% ABV. Offered in highly curated quantities, this specialty rye features aromatic notes of carmelized candy apples, oak, and roasted nuts seasoned with cinnamon.
