The 19th release of Buffalo Trace’s Experimental Collection is crafted from an old fashioned method of making sour mash bourbon, used as far back as Colonel Taylor’s day in the 1900’s. Using this process, the bourbon mash is cooked and cooled to standard, but then left to sit, allowing it to sour before yeast is added to start the fermentation process. Composed of BT’s rye bourbon mash bill #2, this bourbon is placed into barrels at 125-proof and aged for 13 years in level 7 of warehouse I. Bottled at 45% ABV (90-proof), the nose opens with rich woody notes. A sip brings an array of flavors with notes of popcorn and slight spice on the tongue, followed by light caramel and vanilla with notes of cocoa, oak, and a hint of fruit.
