Ichinokura Mukansa Extra Dry Honjozo is a pioneering sake from Ichinokura Brewery, located in Matsuyama, Osaki City, Miyagi Prefecture. Established in 1973 through the merger of four historic breweries, Ichinokura blends centuries-old craftsmanship with forward-thinking ideals. The name “Mukansa,” meaning “unclassified,” reflects the brewery’s decision in 1977 to move beyond the official sake grading system, offering high-quality sake free from taxation bias tied to classification. This bold move positioned Ichinokura as a sake innovator, committed to delivering exceptional value and quality directly to the consumer.

Crafted with Toyonishiki rice polished to 65%, this Honjozo sake features a light and smooth texture with a moderate aroma of grain, cream nuts, and a subtle touch of mint. With an SMV of +9.5 and 15.5% ABV, it is unmistakably extra dry, offering crisp acidity and a well-balanced savory flavor that finishes mildly. The dryness delivers a satisfying sharpness at the back of the throat, making it especially refreshing. Serve chilled for a cleaner, crisper expression or gently warmed to bring out a fuller body and soft acidity.
