We are proud to offer you our special bottling featuring four agaves: the artisanal Ensamble Tepeztate / Cuishe / Tobala / Espadin.The Tepeztate agave grows wild on mountainsides and is difficult to harvest. The Cuishe agave develops as a long vertical s tem or trunk. The sugar is concentrated near the top where the pencas remain green and spiky. The Tobala, one of the smallest agaves, has always been viewed as the’King Of Wild Agave’ due to its scarcity and depth of flavor.
Mezcal Type: Marmor ata / Karwinksii / Potatorom / Angustifolia Haw
Cooking: Earth oven, using wood and river stones.
Milling: Tahona pulled by horse
Fermentation: Open / Natural in wood vats with wild yeasts and spring water.
Distillation: Double in Cop per Pot Still

Nose: Beautifully complex nose. Vegetal notes such as celery, eggplant and olives are brightened by grapefruit and lemon leaf accents complimented by aromas of chile pasilla, corn, ciabatta bread, and a hint of iodine.
Palate: Vegetal notes of Cuishe, the minerality of the Tepeztate, and the citric accents of theTobala are integrated and complemented perfectly by notes of dried chiles and smoke. The lingering finish gives way to sweet coffee and c aramel.
