Sourced from a small east-facing lieu-dit called Les Tilles, home to vines 25+ years of age that ripen perfectly enough that there is hardly ever sulfur used for this cuvee. Whole-cluster pressed into tank, then racked into neutral barrels for fermentation and aging.
