The Redbreast Small Batch Cask Strength Pot Still Irish Whiskey was crafted and released in a series of 4 batches, A to D, starting around late 2019 and cited as a combination of 14 year old aged stated whiskey distillate matured in choice bourbon and sherry casks. Each batch is estimated to have been produced in 25 barrels, and then blended in unspecified amounts to achieve unique profiles from pure ex-bourbon to pure ex-sherry in taste and finish. Since its initial release, the age statement has been removed, officially moving this crafted pot still whiskey into the NAS category. Available in the US only, Redbreast Small Batch Cask Strength is still matured in both bourbon and sherry casks, and then rested for an additional 70 days in Oloroso sherry and/or bourbon butts. Bottled at 117.4-proof, the nose opens with classic bourbon, aged oak, cherries, and butterscotch. These are followed by a palate of malted barley, cream, vanilla, and layers of dark fruits including blackberries.
